Aburi Otoro on Basil Risotto

The TORO is the fatty underbelly of BLUEFIN TUNA. It is caught in New England this time of year. Traditionally used in sushi preparation, toro is also delicious when seared.

Ingredients:

  • Bluefin Toro

  • Basil Leaves

  • Vegetable Stock

  • Onions

  • Short Grain Rice

  • Pecorino Romano Cheese
