This recipe is courtesy of Alyson Arnold, a family member of one of our team, who also happens to be a personal chef and seafood lover.
Ingredients:
3 Halibut Cheeks
Juice from half a lime
3/4 cups of coconut milk
2 tbsp of minced ginger
1/2 cup of chopped onion
Large clove of garlic
Salt
Butter
Salt halibut cheeks, squeeze lime juice on top, then soak in coconut milk for a half an hour - flipping them 2 or 3 times.
Saute ginger, onion, and garlic in olive oil.
When ginger onion and garlic are browned (about 10 minutes), add 2 tbsp of coconut milk (that the cheeks are soaking in) to the pan and cook until evaporated. Add a pad of butter, let melt, then add the cheeks (only - not milk) and let brown on both sides. Add a cup of greens (I used baby bok choy), the rest of the coconut milk, and cover. Cook for about 10 minutes.
