Grilled Swordfish with Pesto Compound Butter and Slow-Roasted Heirloom Tomatoes & Peppers

Our friend Karen—a chef and food blogger (over at A Zest for Life) from Greenwich, CT—has graciously shared this incredible recipe with us and with you all! Be sure to check out the blog post as well as the recipe for some mouth-watering ideas.

Ingredients:

Pesto Compound Butter & Swordfish

  • Swordfish steaks

  • Unsalted butter

  • Pesto

  • Sea salt

  • Extra virgin olive oil

  • Cajun seasoning

Slow-Roasted Heirloom Tomatoes & Peppers:

  • Heirloom cherry tomatoes

  • Bell peppers

  • Extra virgin olive oil

  • Sea salt & pepper

  • Italian seasonings

  • Extra virgin olive oil

  • Shallots

  • Fresh garlic

  • Cayenne pepper

  • Pasta (optional – add to warm roasted tomatoes & peppers)

  • Basil leaves (for garnish)
