Serves 4
Ingredients:
- 4 cod fillets
- 4 minced shallots
- 3 heads of garlic
- 4 tomatoes (sliced) or cherry tomatoes (sliced in 2)
- 2+ ounces of sliced chorizo
- 10 black olives (sliced)
- 1/3 bottle of dry white wine
- 5 sprigs of thyme
- a bit of butter (in French = a hazelnut of butter!)
- 2 sliced scallions
- a bit of cayenne pepper (or hot pepper flakes)
- juice of 1 lemon
- 1 handful of parsley
- salt and pepper
Instructions:
- Preheat oven to 400.
- Butter oven dish.
- Place fish fillet.
- Add salt and pepper.
- Press garlic.
- Add shallots, tomatoes, olives, and chorizo.
- Pour white wine.
- Sprinkle thyme, cayenne, and scallions
- Cook for 20–20 minutes.
- Just before serving, dribble lemon juice and sprinkle parsley.
